Gastronomy is one of the most powerful elements in transmitting the identity of a destination, playing a crucial role, and even a trend, in shaping its image. However, its analysis and design has generally been limited to manufacturing and service operations. The digital development of gastronomy (virtual, reputation, multimedia content) together with the new post-covid-19 scenario makes it necessary to analyse the new digital and virtual presence of gastronomy, as well as the consequences of new eating habits, consumption, and procedures and protocols that may need to be implemented in the production and service of food and beverages. The objective of the project is the development of a Gastronomic Centre with a focus on digital analysis of the image, reputation, impact on the emotions and experience of the tourist at the destination, and after their return home. The centre, in addition to monitoring these aspects, will also design products and experiences around gastronomy and its use as a vehicular element to enhance the Canarian identity, as well as for its better integration into the value chain.
